Spring is here, and so is Easter!

With so many great plant-based recipes out there these days, there’s absolutely no reason any vegan or vegetarian should feel deprived during the holidays.

If you’re looking for something delicious to whip up for that vegan or vegetarian Easter dinner, here are a few ideas to get you started.

Vegetarian Easter Dinner Recipes

  1. Springy Vegetable Quiche from Pinch of Yum (Vegetarian)

Pinch of Yum is one of my favorite sites for delicious recipes. While not all of their recipes are vegetarian / vegan, they do have quite a nice selection. This Springy Vegetable Quiche makes for a great brunch or vegetarian Easter dinner.

Not down with the eggs?  No problem! Here’s a great recipe  for Vegan Quiche from Loving It Vegan that substitutes firm tofu for eggs, making this a great vegan option.

  1. Bedeviled Eggless Deviled Eggs from Skye Michael Conroy (aka The Gentle Chef)

Deviled eggs have always been a holiday favorite for me. Imagine how happy I was to find an eggless version created by Chef Skye Michael Conroy!

This recipe uses extra firm tofu, Kala Namak (black salt), and vegan mayonnaise to whip up these creamy eggs.

Serve these up with a few of your favorite sides and you’ve got a filling meal.

  1. Yummy Pecan, Sunflower Seed, and Zucchini Loaf from Laura Theodore (aka The Jazzy Vegetarian)

Looking for a heartier vegetarian Easter dinner? This one will not disappoint!

Back in episode 359, we had Laura Theodore as a guest on the podcast to discuss her book, Vegan for Everyone. Laura also shares amazing recipes on her website like this one for Pecan, Sunflower Seed, and Zucchini loaf.

Be sure to check out Laura’s Hungry Guy Burgers,  Peanut-y Carrot Noodles, and Cold Blueberry Soup, in our recipes section.

  1. The Best Vegan Ham Recipe (Seitan) from The Cheeky Chickpea

Who says a vegetarian Easter dinner can’t have ham? Vegan ham, that is! This one is made from seitan and is not only great for your Easter dinner but can also be sliced up in sandwiches.
