The Story of Our Veggie-Rap
A couple of weeks ago Vickie delivered a very cool presentation to 300 of her peers at her corporate job. Her company really pulled out all the stops to make this TED-like event spectacular, and I could not have been more proud of Vickie for being selected, and for getting up there on stage and speaking.
In her presentation, Zen and the Art of Being Me, Vickie illustrated the importance of being true to yourself in all things, and she used the story of how Vegetarian Zen came to be as her example. As she developed her speech she had the opportunity to work with an amazing TED coach, who thought it would be a great idea to incorporate some of our podcast soundbytes into the speech.
And then he found out that one of those juicy soundbytes was a rap song that Vickie wrote, and that we performed at the beginning of Episode 019.
And that’s how I ended up on stage WITH Vickie for a short segment of her presentation, as we performed the Veggie Rap, complete with carrot mics. It. Was. Insane.
And it made us hungry…for veggie wraps!!
- whole grain tortillas
- Nori seaweed sheets
- Lettuce leaves (Romaine and Bibb work well)
- Collard leaves
- Dinosaur (Lacinato) kale leaves
Of course, fresh veggies are always an option, but BO-RING. Consider some stuffing them with cooked veggies paired with things like hummus. Read on for some ideas:
- seasoned, roasted vegetables
- creamy cold salads such as:
- Mediterranean delights such as Easy Vegan Falafel and hummus
- veg versions of “traditional” bun-fillers, like Pinto Bean & Quinoa Sloppy Joes or BBQ Jackfruit
These are just a very few ideas to get you started…and I’m guessing once you get started thinking of creative ways to make wraps, you won’t be able to stop!
