How to Make Vegetarian Stuffed Shells
These stuffed shells are surprisingly easy to put together, especially if you prep a few elements in advance. Here’s how we do it in our kitchen:
Step 1: Cook the Pasta Shells
Bring a large pot of salted water to a boil. Cook the jumbo shells until just al dente—usually a minute or two less than the package says. Slightly undercooking keeps them sturdy for stuffing.
Drain and rinse with cool water to stop the cooking. Set them aside on a baking sheet so they don’t stick together.
Step 2: Make the Filling
Add all filling ingredients to a large mixing bowl or food processor and mix until creamy and well-combined. If using a food processor, place all filling ingredients in the bowl and mix until creamy.
Step 3: Fill the Shells
Pour one cup of the marinara sauce into the bottom of the baking dish and spread it to cover.
Spoon or pipe the filling into each shell. A piping bag makes this less messy, but a spoon works just fine.
Place each filled shell seam-side up on top of the sauce in the baking dish.
Step 4: Add Sauce and Cheese

Cover with foil and bake at 375°F for about 25 minutes. Remove the foil and bake another 10 minutes until bubbly and slightly golden.

Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish or oven-safe skillet.
Cook the pasta shells
- Bring a large pot of salted water to a boil. Cook the jumbo shells until just al dente, about 1–2 minutes less than the package directions. Drain, rinse with cool water, and lay the shells on a baking sheet to prevent sticking.
Prepare the filling
- In a large bowl (or food processor), combine ricotta, mozzarella, parmesan, garlic powder, onion powder, spinach, salt, pepper, and egg (if using). Mix until smooth and creamy.
Fill the shells
- Spread about 1 cup of marinara sauce on the bottom of your prepared baking dish.
- Spoon or pipe the filling into each pasta shell using a spoon or piping bag. Arrange filled shells in the baking dish on top of the sauce.
- Pour the remaining marinara sauce evenly over the stuffed shells. Sprinkle with additional mozzarella and parmesan if desired.
Bake
- Cover the dish with foil and bake for 25 minutes.
