  • 1 can of black beans drained and rinsed
  • 1 cup of cooked brown rice or microwaveable rice
  • 1 cup of cherry tomatoes halved (or diced tomatoes)
  • 1 avocado diced
  • 1/2 cup of corn kernels canned or frozen
  • 1/4 cup of crumbled feta or shredded cheddar cheese optional or use vegan cheese
  • A handful of chopped cilantro
  • 2 tablespoons of your favorite salsa or pico de gallo
  • 1 lime cut into wedges
  • Salt and pepper to taste
  • A pinch of smoked paprika or chili powder optional

Instructions

  • Heat the rice: If using microwaveable rice, heat it according to the package instructions. If you have leftover rice, warm it up in the microwave for about 1-2 minutes.
  • Mix the beans and corn: In a microwave-safe bowl, combine the black beans and corn. Heat them together for about 1-2 minutes or until warm.
