Sometimes when you eat something often, no matter how delicious it is, you reach a point where you just need to switch it up a bit. I make enchiladas just about every week, and for ages this Spinach Enchiladas Recipe has been my standard. And I must admit, they’re pretty fabulous.
Recently Vickie, who could probably eat enchiladas every single day, mentioned that she was a little tired of mine. *GASP* No! How can that be?? (Truth-be-told, I’d been feeling a change might be in order as well).
So I planned a fiesta, invited a few of spinach’s closest amigos, and we got the veggie enchilada party started!
