White Beans and Kale with Vegetarian Meatballs

I use kale in this recipe, but you can easily substitute your favorite green leafy vegetable (spinach, collard greens, mustard greens, etc), or feel free to mix it up!

Ingredients
  • 1tbsp olive oil
  • 15 frozen vegetarian meatballs
  • 1cup vegetable stock
  • 1bunch kalewashed and chopped
  • 1 (14.5 oz) can great northern beansdrained and rinsed well
  • 1 (14.5 oz) can diced tomatoes
  • 1/4tsp freshly ground black pepper
  • 1/4tsp freshly ground sea salt
  • 1/3cup grated Parmesan cheese

Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add vegetarian meatballs and rotate pan to coat them with oil.
  3. Cook meatballs until heated throughout, about 15 minutes.
  4. Add vegetable stock and bring to a boil.
  5. Add kale and stir often until wilted.
  6. Stir in the beans, diced tomatoes, salt and pepper.
  7. Return to a boil, then reduce heat and simmer until greens are cooked and tender, about 10 minutes.
  8. Remove from heat and stir in Parmesan cheese.
