I use kale in this recipe, but you can easily substitute your favorite green leafy vegetable (spinach, collard greens, mustard greens, etc), or feel free to mix it up!

Ingredients
- 1tbsp olive oil
- 15 frozen vegetarian meatballs
- 1cup vegetable stock
- 1bunch kalewashed and chopped
- 1 (14.5 oz) can great northern beansdrained and rinsed well
- 1 (14.5 oz) can diced tomatoes
- 1/4tsp freshly ground black pepper
- 1/4tsp freshly ground sea salt
- 1/3cup grated Parmesan cheese

Instructions
- Heat the olive oil in a large pot over medium heat.
- Add vegetarian meatballs and rotate pan to coat them with oil.
- Cook meatballs until heated throughout, about 15 minutes.
- Add vegetable stock and bring to a boil.
- Add kale and stir often until wilted.
- Stir in the beans, diced tomatoes, salt and pepper.
- Return to a boil, then reduce heat and simmer until greens are cooked and tender, about 10 minutes.
- Remove from heat and stir in Parmesan cheese.
