Vegan Lentil Taco Meat

This vegan lentil taco meat takes a total of 40 minutes to make. It's great way to celebrate Taco Tuesday!

Ingredients

  • 1 cup dry brown or green lentils or 2 cups cooked
  • 1 tablespoon olive oil or water for oil-free cooking
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 bell pepper finely chopped (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper optional
  • salt and pepper to taste
  • 1/4 cup vegetable broth or water as needed

Instructions

  • If using dried lentils, rinse them and add to a pot with 2 cups of water. Bring to a boil, then simmer for 20-25 minutes or until tender. Drain any excess water and set aside. If using pre-cooked lentils, skip this step.
  • Heat oil (or water) in a large skillet over medium heat. Add the onion and cook for 3-5 minutes until softened. Add the garlic and bell pepper, and cook for another 2 minutes.
  • Stir in the tomato paste, soy sauce, and spices (chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper). Cook for 1-2 minutes to let the flavors meld. (Note: you can also use 1-2 tablespoons of our taco seasoning blend in place of the spices).
  • Add the cooked lentils to the veggie mixture in the skillet. Pour in the vegetable broth or water a little at a time to keep the mixture moist but not soupy. Let it cook for another 5-7 minutes, stirring occasionally.
  • Taste and adjust seasonings as needed. If the mixture is too dry, add a little more broth or water.

Notes

Serving Suggestions:
  • Serve warm in tacos, burritos, salads, or over rice.
  • Garnish with your favorite toppings like fresh cilantro, diced onions, avocado, salsa, or vegan cheese.
